A Christmas tree is the most ideal and essential component to complete or give the Christmas’ feels. As for this, so are black cakes for the Caribbean folks.
Nothing is more satisfying than a great exquisite strong black cake and I mean strong as the taste of fire – be mindful though, just moderate alcohol. Moving on, black cakes make the closure of the Count down to Christmas Eve’s delights list by its distinctive taste and love that the Caribbean folks have for its excellency. One fact, one would never meet any Caribbean folk (Trinidadian) without a black cake in their homes. As of hams being in the spotlight on every Xmas table, so is black cake most present and served in every Caribbeanian’s home.
Down below is a black cake recipe made for you.
Black Cake Recipe
Fruit mixture;
2 cups of raisins
1 cup of currant
1/2 cup of prunes
2/3 cup candied mixed peel
1 1/4 cups cherry brandy
1/2 cup brown sugar
1 tsp of mixed spice
Cake batter
2 cups butter, soften
1 cup brown sugar
8 eggs
4 cups flour
6 tbsp Home Flavor food browning
1 tsp vanilla extract
Method
Gather the raisins, currants, prunes, peel and place them inside the food processor and blend them till fine. Transfer the blended fruits into a large bowl. Add cherry brandy, 1/2 brown sugar and peel into the bowl and mix well. Seal the bowl when finish and place in the refrigerator for 2 weeks to 2 months if you want the flavors to blend in well.
Preheat the oven to 165 degrees C. Grease cake pan and place in parchment paper to prevent burning cake and easily removing cake when it’s finished.
Cake batter method
Combine the butter and brown sugar and beat till smooth using cake blender. Add eggs and beat till smooth. Then add in the fruit mixture and beat once again. Pour flour, food browning and vanilla extract and mix as you pour till it cooperates smoothly with the other ingredients. Pour the cake mixture into the greased cake pan and place into oven for 2 1/2 hours. When done, leave to cool and then enjoy.

Although, black cake consists of alcohol, moderate consumption of alcohol is good for health and it boosts health in a distinctive way.
Consuming alcohol in little amount can render detoxification in the body, helping to detox the body of toxic and excess metabolites. In addition, alcohol gives a sense of well being and reduces stress. Apart from alcohol, the addition of dried fruits; prunes, raisins and currants provides great amount of antioxidant, fiber and minerals. Which all aid the body to great health.

Intriguing variation on the more traditional Christmas cake, though I would substitute dried cranberries for raisins. You’re spot-on about the alcohol. Though I’m not a drinker, not really, a little wine, etc. greatly enhances so many dishes. Nice post!
